Ginger-Lime Cole Slaw

This is a light, non-mayonnaise based, slaw that's a little different than the ordinary cole slaw. It's especially good when paired with bbq food or fish and chips.

Excellent recipe as is. My family likes mayo based coleslaw so I made a few changes. I omitted the oil and added 3-4 Tablespoons mayo. Also added 1 teaspoon apple cider vinegar. We absolutely love it!!

Directions

  1. Chill cabbage, carrots, onions and cilantro.
  2. Combine and wisk lime juice, sugar, oil, ginger, salt and pepper to taste and red pepper (optional) in a small bowl.
  3. Place all other ingredients in a large bowl.
  4. Toss the salad with the dressing.
  5. Refrigerate salad 10 minutes before serving.
