  • Heat the water in a pan with the ginger. Bring to the boil then add sugar.
  • Simmer for five minutes, then strain into a cup to serve.

  1. I'm glad I'm lucky enough to be the first reviewer, as I get to praise this interesting little recipe. I've made this twice now, following the recipe exactly. (I live in the USA, but still followed the metric measurements closely.) Both times, I made it hot, and used only 2 T. of brown sugar (the low end of the range). I thought that the drink was sweet enough, though maybe 3 T. might not be too much if I'd tried it. The ginger flavor was present, but fairly mild (is that the idea?). I used the same amount of ginger each time, but the first time I cut it into maybe 5 slices, and the second time 10, the idea being that with more surface area the ginger flavor could come out more. It hardly made a difference to me, I found. Still, this is a nice drink to have on a chilly winter evening, and I look forward to making it again when I have more fresh ginger on hand, and even more so look forward to seeing how this is when served chilled on ice. Lastly, I should mention that I separately ate the strained-out ginger (why waste it?), but it's pretty strong stuff!
