My brother and I loved this treat as children. It's easy and the ginger adds an interesting flavor.
- 1 (16 ounce) cansliced peaches, drained
- 1 cup orange juice
- 2 teaspoons finely chopped crystallized ginger
- 2 bananas
- Combine peaches, orange juice and ginger.
- Chill two hours to blend flavors.
- Peel bananas and slice diagonally.
- Add to peaches.
- Serve in small dishes garnished with kumquats and mint leaves.
