This recipes comes from a posting in the Summer 2004 "Disney Magazine". According to the article, this dressing has been served at the Teppanyaki Dining Rooms in Japan in Epcot since its opening in 1982. It is a nice light dressing that has become a favorite.

Directions

  1. Combine all ingredients into a blender.
  2. Blend on low for 1 minute, then high for 30 seconds.
  3. Add additional salt or pepper to taste.
  4. Chill.
  5. Stir before serving on salad.

I substituted pomagranate balsamic vinegar for white vinegar. Very good.

Wonderful. I just made this tonight and what a winner. I only used about 1/8 cup of onion and added a scant amount of ketchup and sesame oil (which I saw in another ginger dressing recipe...think that gave it a richer color). I have made ginger dressing before but never thought to put it in the blender (just used a whisk). I was amazed how different the consistency was. It was PERFECT. Thanks for the recipe.
