Ginger Cookies

ingredients
- 2 cups all-purpose flour
- 2 1⁄2 teaspoons ground ginger
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 tsp.ground clove
- 3⁄4 teaspoon salt
- 3⁄4 cup crystallized ginger, finely chopped
- 1 cup brown sugar, packed
- 1⁄2 cup vegetable shortening, room temperature
- 1⁄4 cup unsalted butter, room temperature
- 1 large egg
- 1⁄4 cup molasses, light
- extra sugar for rolling cookie
directions
- Combine first 6 ingredients in a bowl and whisk to blend. Mix in crystallized ginger.
- Using an electric mixer, beat brown sugar, shortening and butter until blended.
- Cover and refrigerate one hour.
- Preheat oven to 350°F Lightly butter 2 baking sheets.
- Put extra sugar in a thick layer on small plate.
- Using wet hands, form dough into medium-sized balls (1 1/4 -inch balls, but really who measures!).
- Roll in sugar to coat completely.
- Bake cookies untl cracked on top but still soft to touch, about 10-12 minutes.
- Do NOT overbake.
- Cool and hide from children if you don't want them all consumed in the first 24 hours!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
