An absolutely delicious chicken recipe. This appeared in one of our Local Newspapers. Takes very little time to make.

Ingredients Nutrition


  1. In a large frying pan, heat oil on medium heat.
  2. Add sliced onions and saute'until translucent, about 5 minutes.
  3. Add garlic and saute' for 1 more minute.
  4. Remove onion and garlic into a dish and set aside.
  5. Cut chicken into bite size pieces and add to frying pan; stir-fry for 2 minutes.
  6. Add soy sauce, ginger, mint and basil leaves and cook for 1 minute.
  7. Add mushrooms, green onions and sambal oelek.
  8. Return onions and garlic to the pan and continue cooking until chicken is tender, about 3 minutes; stirring occasionally.
  9. When chicken is just cooked, add rice vinegar, sugar and fish sauce; stir well and cook for 2 minutes.
  10. Remove from heat.
  11. Serve immediately over cooked rice of your choice.
  12. NOTE: Sambal Oelek is a hot Chili Sauce and is available in most major supermarkets in the Asian Food Section.

I enjoyed this dish very much, even though I substituted 1 teaspoon each dried mint and basil for the fresh. I thought the amounts of soy sauce, sugar and fish sauce were perfectly balanced. Am looking forward to making this again when fresh herbs are in the market. Thank you very much for posting this recipe.

Would give it more stars if I could. Very tasty. All of the individual flavors came through. Do not skip the sambal or fish sauce, since they add subtle flavors. I might even use a little more sambal next time. I found this in the Asian section of Safeway, so it should be easy to find. Thanks, Bill, for posting this.
