From the Perricone Promise Diet book.
- 2 cups chopped cooked chicken breasts or 2 cups firm tofu
- 1⁄4 cup chopped red onion
- 1⁄2 stalk celery
- 1 teaspoon sunflower seeds
- 1⁄4 teaspoon finely minced fresh ginger
- 1 1⁄2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- romaine lettuce
- Toss all the ingredients together until fully coated with olive oil and lemon juice. Serve on a bed of romaine lettuce.
