Ginger Biscuits

These are really delicious and are perfect for kids and with milk. Are good if you are pregnant, too - help with the morning sickness!

Made a batch of these over the weekend. I found that the ginger flavour didn't come through very strong so will double the ginger quantity next time. Also, the cooking time was far shorter for me, around 15-20 minutes. The biscuits came out very nicely though, light and crunchie!

  1. Beat butter and sugar.
  2. Add eggs, syrup and bicarb of soda, dissolved in water.
  3. Add dry ingredients.
  4. Roll into balls and place on a baking tray.
  5. Bake for 30 minutes at 180°C.
