Ginger Beef and Pineapple Skewers

- 118.29 ml soy sauce
- 44.37-59.16 ml honey
- 29.58 ml white vinegar
- 7.39 ml garlic powder or 2-3 very finely minced fresh garlic cloves
- 7.39 ml ginger powder
- 177.44 ml oil
- 1 green onion, chopped
- 1360.77 g boneless beef sirloin (cubed into 1 - 1-1/2-inch pieces, can use up to 4 pounds beef)
- 1 large fresh pineapple (peeled, core removed and cut into large chunks)
- 3 green bell peppers, cut into 1-inch pieces
- 2 red onions, cut into 1-inch pieces
- 10 long metal skewers
directions
- In a small bowl, mix together soy sauce, honey, vinegar, ginger, garlic, oil and green onion.
- Transfer marinade to a large heavy-duty ziploc freezer bag or a glass dish.
- Add in the cubed beef; seal bag and turn to coat beef well.
- place in the fridge for a minumum of 8 hours or overnight (overnight is better).
- When ready to grill, drain the marinade and discard.
- Skewer beef, pineapple chunks and veggies in an alternating pattern.
- Grill over hot coals for about 18-20 minutes.

Loved these kittencal!! I read the recipe wrong and they still turned out yummy. I only got to marinate them for three hours, and DH bought cut up STEW meat for the skewers! He was trying to be helpful and thought I'd be happy because the meat was already cut...so the meat was a bit tough. I loved the flavor of the marinade and can't wait to make again correctly!! I cooked less time than called for and was very happy...the only thing I will do different is save a little of the marinade to baste the veggies with! Thanks Kittencal for another winner!!
