Ginger and Toffee Self Saucing Pudding

An oldie but a goodie.

  1. Combine the flour, baking powder, ground ginger and sugars in a large bowl.
  2. Melt butter with golden syrup.
  3. Pour into dry ingredients with the milk and mix.
  4. Place in greased oven-proof dish that is quite deep, (I use a small lasagne dish) Put sauce ingredients in a bowl.
  5. As you add the boiling water, stir until ingredients are mostly dissolved, then pour over the batter mixture.
  6. Bake for 45 minutes at 180C degrees.
  7. Nice served with vanilla ice cream and a dollop of whipped cream.

I agree that the ginger is a little strong, so may cut back on that next time. I thought that perhaps the actual pudding may have been a bit thicker, it seemed to have a lot of sauce. But have saved for leftovers another time. Nice and easy recipe though and will make again.

Really enjoyed this pudding. The ginger is quite strong so some people may want to cut the amount back. Great comfort food.

Our family enjoyed this pudding, it was very easy to make. The taste of ginger was noticeable, but not overpowering. Youngest son stated his favourite was still chocolate self saucing pudding, but he thought this was very good also. Will be making this again. A good family dessert.
