In a large mixing bowl, cream butter and sugar. Add eggs and vanilla. Add remaining ingredients and mix. Shape dough into a large roll, and wrap in plastic wrap or waxed paper.

Refrigerate dough for at least 2 hours, or up to overnight.

Preheat oven to 375 f. Unwrap dough and slice into 1/4 slices. Place on greased baking sheet and bake for 10 minutes or until golden. Let cool.
Crispy and mild-tasting. The poppy seeds add interesting texture and flavor, and a surprising heartiness. A few of my cookies ended up with a small hole where the dough, melted and ran, and the cookie got overbrowned. Maybe I should have softened the butter, and I ended up with little butter-wads in the dough, or perhaps there were dark spots on the cookie sheet that overheated. C'est la vive... The cook gets to eat the ugly ones, right? ;)
