I liked that this recipe needs only 1 apple for the entire pancake. I used a honey crisp. I needed to cook the apple slices for about 12 minutes on the stove top to soften them. Next time I need to make sure that I thoroughly incorporate the whipped egg whites into the pancake batter, without deflating the egg whites. I was trying to be careful to not overmix the 2 batters and I ended up under mixing it a little and so the pancake was a little lopsided after cooling out of the oven. Did not effect the taste at all. I baked mine in a 10" cast iron skillet. The pancake needed about 12 minutes in my oven to get golden brown. Great recipe. I can see why chef Sarah in New York says it is a winner every time.

This is a sweet treat that would make a good dessert! Unlike other oven pancakes I've had - it actually tastes like a pancake - but one that's rich and almost too moist. I added just a touch of vanilla and to offset some of the sweetness, served it with a dollop of Greek yogurt. I had cut the recipe down to a single serving using a little over 1/4 of a large Granny Smith - I would have liked more apple - but that's a personal preference, as there was a nice balance of fruit to cake. Very quick to make I can see where this would be a great treat for kids - I might try making it with whole wheat pastry flour. I used my 7" cast iron frying pan but still baked for the 10 minutes and it came out perfectly cooked. Thanks for sharing! Made for ZWT 6 ZINGO by one of the Unrulies Under the Influence.

All 3 kids gave 2 thumbs up (total = 6) to this delicious pancake - mom can't ask for more. I only used a tablespoon of sugar in the actual pancake and we drizzled golden syrup over top. Thanks!

My guys really enjoyed this pancake and said it was a worthy 5 star recipe. It comes out of the pan so easily with a lovely gooey topping. We didn't think it needed any additional syrup. Thanks for sharing this very different breakfast treat. Made for ZWT - Xtra Hot Dishes.

This was really good and perfect use for a cast iron skillet. It kinda reminded me of a dutch baby. I used a granny smith apple because they are my fav. I made this for ZWT5.

This is so yummy! I made this using the golden delicious apple and they came out so tender. Loved the flavor of the cinnamon. Nice sweet treat for breakfast. Thanks for posting. :)

What a great way to start the day! I knew when I saw this recipe, having tried other baked pancakes, that this one would be a winner. The apples and cinnamon bring this over the top! I made as directed, only using a Fiji apple instead of the golden delicious. I served with real maple syrup and a side of sausage. A tip for those inverting this onto a platter: be sure to do your flipping on a platter placed over paper toweling. The butter/cinnamon is still pretty gooey and will spill over as you turn your pan if you are not careful. Thanks so much for this recipe, Sarah in New York, for a recipe I am sure to use again and again!
