This is just plain good. Serve with mashed potatoes and chew slowly to enjoy. If you are not a fan of caraway seeds just omit them.
- 3 lbs country-style pork ribs or 3 lbs spareribs
- 2 lbs bulk sauerkraut
- 1 teaspoon caraway seed
- 1 teaspoon celery seed
- 1⁄2 cup barley
- 1 dash pepper
- Wash and cut pork into seving size pieces.
- Mix all ingredients together.
- Do NOT rinse kraut.
- Simmer slowly about 3 hours, adding a bit of water as needed.
This is in my crockpot, minus the barley, but plus a grated onion, as I type ! I really dislike gloppy BBG sauce, but we had a bunch here for BBQ ribs a while ago, and I threw the uncooked ones in the freezer. DD (and her twins) said this was WAY better - and since I do like sauerkraut with sausage (Christmas special !), they were SURE I would like these. Smells scrumptious already ! I DID rinse the kraut. She said keep the crockpot on low for 8-10 hours, and the bones just fall to the bottom.
