I was personally disappointed in this recipe. I didn't realize that I was making a very dark bread. If I had seen the photo before i made it I would not have made it. When I was putting the ingredients in....I thought, "Why does this recipe have both molasses and cocoa in it? This will not be anything like the light rye breads I ate when I lived in Germany." Alas, it is even darker than the photo reflects. My DH is happy...he loves dark breads...I'm not a fan. Sorry but a 4 isn't so bad...DH would have given a 5 and I would have given a 3...so I compromised and made it a 4. I'm sure that my GGreat Grandparents would have loved it. Made for the Oma Challenge in the ZWT #6 game of 2010.
I made as posted. Love the color but mine also fell and that is the reason why I am not going to take a picture. I got about 3 nice slices off of one end. I did set the crust to LIGHT hoping that would help it not collapse. It is very dense which is fine but think it is a bit bitter. I think the recipe is probably supposed to be a two pound loaf and next time would try two changes-increase the molasses to 1/4 cup and decrease the yeast to 2 1/4 teaspoons. This was a perfect Rye bread. Nice and dense. It didn't rise a whole lot, but I think that was part of it's goodness! Made for ZWT 6 and the Looney Spoon Phoodies!
This is a very good bread recipe. I followed the directions exactly as written. It made a rather small loaf but the aroma was great as it baked and the taste and texture are spot on. Thanks for sharing. Made for ZWT 6.
Dense, not high-rising, but delicious flavor. My husband and his family are German and they loved the taste. Does need the slightly longer "whole wheat" bread cycle.
Excellent! A really rich flavor, fabulous sliced thin with cheese, fruit, etc. No
bread machine, so I made this in a stand mixer. I used organic molasses which is I think stronger tasting than some--so next time I might cut back on this ingredient a bit. I also think it would be fun to add more and different seeds, including some on the outside. Thanks for a very good bread.
Yummy rye bread recipe! Loved the color and the smell was outstanding. Loved it still warm and slathered with butter :). My loaf did not rise all the way, but while a bit dense, it was a great texture and I think great for a good rye bread. Made for a Seasoned Sailor and his Sassy Sirens - ZWT6.
I got a nice size loaf from this recipe. The only problem I had was that half way through cooking my bread deflated. :( Made for ZWT6- No-Nonsense Nibblers
