This recipe makes "noodles" that are light and delicate, but easy. Mine didn't stay curled up when I put them in the soup, but I think that is because I didn't roll them up exactly right away and I don't think I let them cool completely. Perhaps you need a lot of veggies and/or meat so they stay neatly curled. I don't know, but they were very good.
