Great pancakes! Absolutely loved the addition of the bacon, great with the nuttiness of the wheat flour. I made half the recipe and got 3 good-sized pancakes. I used cooking spray and mine came out as crispy as I wanted t them. Served with syrup and enjoyed a nice filling breakfast - thanks for sharing the recipe!

My pancakes ended up a bit too thick to become crispy and, as well, I didn't want to add more fat. That being said, I loved the nutty flavor of these pancakes. I only had 150 g of buckwheat flour so scaled the recipe down accordingly. Made for ZWT6 Family Picks

I would say this is more like a crepe than a pancake in that there is not leavening, making it much flatter and not fluffy in texture. Having said that - we love our crepes! The buckwheat flour gave a really nice, nutty flavour and well - there's BACON in the recipe - everything tastes better with bacon! Served with Lyle and Tate's Golden Syrup. Thanks.
