A really quick and yummyl when teamed with kettle chips and some salad, a total favourite of our friends, it'sa really nice social light meal. Originally made by my lovely friend Georgie but it's been tweaked to our taste. These ingredients would serve 4.

  1. Brown the chicken in a frying pan.
  2. Add in the onions and peppers.
  3. Juice the 3 limes and pour into the pan.
  4. Sprinkle on the Oregano.
  5. Lower the heat and allow to simmer and sweat for about 15 minutes.
  6. Pop it into a big bowl and serve with the accompanyments. We find it's really nice with salt and cracked black pepper kettle chips.
