  1. Dissolve lemon gelatin in 1 cup water in double boiler, add marshmallows and stir to melt.
  2. Remove from heat.
  3. Add pineapple juice and cream cheese.
  4. Beat until well blended.
  5. Cool slightly.
  6. Fold in whipped cream and mayo.
  7. Chill until thickened or firm for scooping into eyeballs.
  8. Using a melon baller, scoop full balls of the mixture and set aside for decoration.
  9. To decorate, use food coloring and a clean paintbrush.
  10. Use the paintbrush to paint irises on the eyes.
  11. Use black food coloring to paint the pupil on the eye.
