  • Put all ingredients into container of electric blender in order listed.
  • Cover and blend at high speed 5-10 seconds or until ingredients are finely chopped.
  • Chill thoroughly and serve.
  • May be served with side dishes of chopped cucumber, green onion, green pepper, tomatoes, croutons.

  1. I gave this recipe 3 stars. This was the first time I tried Gazpacho. I got to try this in my Culinary class. I was able to try another recipe that did not puree the ingredients and I must say I prefer the chunky Gazpacho. This was pretty bland. I don't know if I would try this again or not.   2. Served this last evening to dinner guests...one whom admitted to being a Gazpacho snob! He said that this was the best he's ever had. I agree! I followed your recipe to the letter, adding a dol lop of sour cream and a few slices of fresh Florida avacodo just before serving. It was a show stopper and so light & refreshing before a heavy steak & potato dinner. This will be served often in my home- way too easy, I was almost embarrased to hear all the compliments!   4. This was my first attempt at making Gazpacho. It was very good and easy. I didn't have a green pepper while I was making it, so I subbed a roasted red pepper. By the time I served it I had a green pepper, so just chopped that up for on top along with some chopped cucumbers and a spoonful of sour cream. I served it with crusty bread and cheese for a light dinner. I also forgot the ice water, but my tomatoes were really juicy so I think it might have been a little too thin with additional water.
     
  5. It's hot and humid here, with not too much in the way of air con - this recipe was GREAT! I also added a hot chili pepper to spice things up - fabulous.

Tweaks

  1. Great flexible recipe! I've tweaked it some everytime I've made it based on what I've got lying around. Try adding some fresh, very ripe melon instead of cucumber. And try a mix of heirloom tomatoes to give it a whole new taste. This has become a staple dish.
