ingredients
- 4 medium tilapia fillets
- 2 eggs
- 29.58 ml mayonnaise
- 236.59 ml breadcrumbs
- 14.79 ml onion powder
- 9.85 ml dry mustard
- 1.23 ml cayenne, to taste
- 14.79 ml garlic powder
- 14.79 ml Old Bay Seasoning
- salt and pepper
- 59.14 ml vegetable oil (or frying oil of choice)
- 14.79 ml butter
directions
- In a pie plate, lightly beat eggs with mayonnaise.
- Combine dry ingredients (bread crumbs, onion powder, mustard, cayenne, garlic powder, Old Bay, and S&P) in another pie plate.
- Over medium-high heat, heat oil and butter in a large, heavy skillet.
- Dip fish in egg mixture, then dredge through bread crumbs.
- Place in hot oil and fry until done, 2-3 minutes per side or until fish flakes easily.
- Serve immediately.

Tried this recipe for the first time today and as usual, the first time I make no changes to the recipe. I follow the recipe to the letter. I will say thought, this recipe will need no adjustments! It is perfect the way it is written! Just for your information, I cooked with Peanut Oil because of the high smoke point .

My bf and I really, really enjoyed this! You are so right too, the flavor of the breading complements the mild Tilapia, but does not overpower it at all. Wonderful blend of flavors and a nice zing. I followed recipe exactly except I did use Eggbeaters in place of the egg and halved the recipe for 2 fillets. My fillets were thin; my instinct was to reserve half of the breading mixture for another time, but I forgot to and ended up wasting 1/4 cup or more of breading mixture (oops!). I agree the egg and mayo worked great to help the breading stick better. Oh yeah, I also replaced the butter with Smart Balance with Flaxseed Oil spread. This was a wonderful new Tilapia recipe for me to add to our repertoire. Bf gives this a very enthusiastic 5 stars (rare for him to give 5). When I saw this in a recipe tag game, I couldn't wait for it to be offered again, lol. Thanks for sharing Gatorbek! I served this with a few drops of lemon juice on each fillet and some bottled tartar sauce, and Recipe #297298. YummY!!
