Very good luncheon or even light dinner on hot summer days.
- 2 cups torn lettuce (your favorite variety)
- 2 cups coarsely diced cantaloupes
- 3 cups coarsely diced honeydews
- 2 cups coarsely diced watermelon
- 1 lb cooked medium shrimp
- 2 tablespoons lightly toasted walnuts
- 1 cup honey Dijon salad dressing
- Mix everything except lettuce in a large bowl and chill for at least two hours.
- Plate up with salad on layer of lettuce greens.
