From Bon Appetit's RSVP section, Lindbergh's Crossing, Portsmouth, NH. These go together fast since you don't peel the potatoes.
- 2 lbs new potatoes, red-skinned
- 8 large garlic cloves, peeled
- 1 teaspoon salt
- 1⁄4 cup whipping cream
- 3 tablespoons butter
- Place potatoes and garlic in heavy medium pot. Cover potatoes with water. Add 1 teaspoon salt. Bring to boil over high heat. Reduce heat to medium; cover and simmer until potatoes are tender when pierced with skewer, about 25 minutes.
- Drain. Return potatoes and garlic to pot. Add whipping cream and butter. Using potato masher, mash until well blended. Season to taste with salt and pepper.
Perfect! So easy and just delicious! A definite do-again recipe, I'll keep it and make these often. Thanks for sharing! Made for Holiday tag game.
I liked these. They tasted good and were creamy - thank you heavy cream. We served roast with gravy on top of these. Thanks
These are my solution to mashed potatoes. I don't really care for potatoes on a regular basis, but these are easy and yummy! I added some real bacon bits as well as some parmesan. I also had a little bit of feta cheese left in the fridge that I through in there. Delicious!
