WOW, what a great damper recipe! This makes such a crispy yummy damper, that has a very unique flavour! The zucchini and garlic really come through and the cheese adds a nice salty taste. I made only half the recipe and still my damper was quite big. It was enjoyed by all and disappeared nearly as quick as it was made. ;) I would be careful about adding too much liquid as I had about 1/4 cup left and my dough was still a little wet. But other than that the recipe really is perfect as is! THANKS SO MUCH for sharing this wonderful winner of a recipe with us, Sarah_Jayne! Ill surely make it again! This was an easy recipe to make. I think the next time I try this I'll leave the garlic in chunks and use about 4-5 cloves. I rubbed a little butter on the plastic wrap so the dough would not stick. This was baked on stoneware and after 30 minutes it was a little doughy in the center. I should have known to add 15 minutes to the baking time since I used the stoneware.
