- 2 (15 ounce) cans cannellini beans
- 1 minced garlic clove
- 1 lemon, juice of
- salt
- pepper
- 1⁄2 cup olive oil
- 3 tablespoons olive oil
- 1 diced roasted red pepper
- 1 tablespoon chopped parsley
- 1 tablespoon chopped basil
directions
- Drain and rinse beans, reserve 1/2 c for garnish.
- puree beans, garlic, lemon, salt and pepper in food processor, slowly drizzle in 1/2 c olive oil while processor is running.
- Transfer to a bowl.
- Toss the reserved beans with the red pepper, 3 tbls olive oil, parsley and basil and then spoon over the dip in the bowl.
