I picked this receipe up from the T-Tapp exercise forum. I haven't made the recipe yet but want it in my recipezaar cookbook so I'm adding it now. One way to serve this is over spaghetti squash.
- 3⁄4 lb shrimp
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley (I used 1 tsp dried)
- 1 tablespoon lemon juice
- 6 -8 cloves garlic
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- Heat the olive oil over medium heat.
- Add the garlic and sautee for1 minute.
- Add the shrimp (which is peeled and deveined).
- Sautee for 3minutes.
- Add the lemon juice, parsley, salt, pepper and cook for an additional minute.
This was great! Had everything I want in a recipe. Easy, elegant and easy. I added an 8 oz. package of whole sugar snap peas. I sauted them for about a minute and then added the shrimp. I also used 4 Tablespoons of olive oil and lemon juice. We like a lot of sauce on pasta. I used the same measurements for the rest of the ingredients. This would be great for company. You could have everything measured and in just 5 minutes have it ready for the table.
SOOOOOOOOOOOO YUMMY! We like this over angel hair pasta with shredded mozzarella cheese sprinkled on top and garlic cheese bread on the side :-) Update: DH recently started WW and figuring this recipe as written @ 2 servings it is only 6 pts, not including whatever you serve it with.
