This is so easy to make it barely counts as a recipe. I am compelled to share it with the world because it is possibly the most delicious sauce I have ever eaten. Everything I put it on or dip into it tastes instantly fantastic, particularly hot chips/fries and my other new favourite dead-easy recipe, Eggplant Chips, which I also learned from the charming Paolo, a flight attendant and erstwhile pastry chef who changed my whole understanding of food. Eat it with hot chips, pita bread, vegetable sticks, crackers, salad, hot and cold meat, in sandwiches, over steamed greens and brown rice, and with everything else besides dessert. Part of the elusive but dazzling flavour comes from the egg in real mayonnaise so I can't guarantee deliciousness from substituting Miracle Whip or another salad cream. Add more or less garlic as you like.
- Mash the garlic as finely as possible.
- Beat together the yoghurt and mayonnaise in a bowl with the garlic.
- That's all.
