- 2 lbs red potatoes
- 5 tablespoons extra virgin olive oil
- 8 garlic cloves
- 2 tablespoons butter
- 2 tablespoons rosemary
- 1⁄2 cup red onion

- Preheat oven to 450.
- Wash and dry potatoes, cut into wedges and place in a large mixing bowl.
- Chop garlic cloves, chop red onion, melt butter, and combine with remainder of ingredients in mixing bowl. Proceed to "mix".
- Transfer to sheet tray. Roast for 25-30 minutes. Shake pan occasionally for even roasting.
