Garlic Roasted Chicken With Maple Glaze

"This dish was made for my family by the daughter of family friends who stayed with us while her parents traveled back to Poland for a few weeks, we were in junior high at the time. It's so simple but SO good, I still make it to this day. It is very garlic-y so beware!"

  • Preheat oven to 400 degrees F.
  • In a large roasting pan or dish, melt the butter in the oven.
  • Peel and cube the potatoes.
  • Place the chicken pieces, potatoes and garlic cloves in the buttery pan, turning to coat. Arrange chicken so skin sides are facing up.
  • Sprinkle lightly with salt.
  • Bake 40 - 45 minutes basting with pan juices every 20 minutes.
  • Remove from oven and pour syrup over chicken.
  • Return to oven for another 20 minutes or until golden.

  1. This is a great recipe and so easy. The hardest part is peeling garlic. Just add as much garlic as you like. Some like more some like less. I also add squash,carrots with the potatoes to make a whole sheet pan meal. We usually use chicken thighs and they come out so juicy and moist.
     
  2. This is a really good dish! I liked that the it was not too sweet or too garlic-y. I made with Yukon gold potatoes that I partially peeled. Made for Spring PAC 2014.

<p>I live in Southwestern Missouri and work for the local Public Works Department. I love my job, it's interesting and I find that I laugh alot when I am here. My favorite dish to cook varies, sometimes it's lasagna, sometimes cilantro chicken enchiladas, meatloaf, whatever I am craving at the moment. I am known for my cheesecake and these ridiculous brownie, marshmallow, peanutbutter krispie bars. I am addicted to Pinterest.</p>
