I came up with this incredibly simple potato recipe today, when my 7 year old son asked me to cook him "some potaoes in the oven, with some garlic on them" for lunch. The 2 kids devoured them, and gave them 5 stars!
- 4 medium roasting potatoes, cut into 2cm cubes
- 2 tablespoons olive oil
- 2 garlic cloves, crushed
- Preheat oven to 200°C
- Pour oil into roasting dish, and heat in oven for 10 minutes.
- Remove from oven, stir garlic through oil. Add potatoes and toss, to coat potatoes.
- Roast for 40 minutes, or until golden and cooked through, shaking the pan occasionally to turn potatoes.
Absolutely delicious as per recipe but scaled up for 3 and totally devoured. For my oven 200C convential took 1 hour in total and for the last 15 minutes cranked it up to 225C - though my potatoes may have been a little larger than specified but were beautifully crispy on the outside and pillows of fluff on the inside with a nice garlic flavour.
