I remember reading about making pimento cheese with garlic in the newspaper years ago but i do not remember whose recipe this was. Everybody loves this pimento cheese.
- 1 (1 ounce) jar diced pimento, with juice
- 1 lb sharp cheddar cheese
- 2 cloves garlic, crushed
- 1 cup mayonnaise
- grate the cheese.
- add the pimentoes with juice and the garlic.
- add 1 cup mayonnaise plus whatever amount of mayonnaise you need to add to get the consistency that you want.
This is a delicious pimento cheese. I did add some chopped onion and green bell pepper along with a little dill relish. I let it chill in the ref. and than used it with recipe#388470. We had a delicious dinner! Thanks for sharing the recipe!
MMMM...this is good! I'm a garlic-kinda gal, so perfect with the cheddar. I used sharp cheese, too. Nice flavor!
Very easy & quick idea for lunch. I also added 1 seeded and finely diced jalapeno pepper. Tasted great on sandwiches with leaf lettuce and spread on crackers later. I didn't need the full amount of mayo though.
