This sounds fancy, but there is almost no work involved! Serve on sliced baguette.
- 1 cup Greek olive, rinsed and pitted
- 2 tablespoons capers
- 1 garlic clove, minced
- 1⁄2 cup pine nuts
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1⁄2 teaspoon thyme or 1⁄2 teaspoon basil
- 1⁄4 teaspoon black pepper
- 1 1⁄2 cups fresh parsley, stems removed
- In a food processor or blender, combine all of the ingredients and process until just smooth enough to spread.
