I used this recipe at a barbeque party I hosted at my home and it was good. So thought of sharing it. Got the recipe from the Gulf News Cookery Book Volume No. 6. Cook time is approximate.
- 12 large fresh mushrooms
- 3 tablespoons olive oil
- 2 cloves garlic, crushed
- fresh parsley
- seasoning (salt and pepper)
- 1 pinch oregano
- Blend oil, garlic, parsley, oregano and seasoning Wash and pat mushrooms dry.
- Cut in two Thread on skewers alternating with tomato and onion Brush liberally with olive oil mixture Barbeque till done.
An excellent partner for BBQ'd steak! I marinated the mushrooms & onions in the basting mixture for about 2 hours - they took on a delicios garlic flavour. I didn't include the tomatoes - they're very expensive (and poor quality) at this time of the year; however, I will include them when our fresh from the garden grape tomatoes are available. this combines 2 of my favorite things mushrooms and garlic,i made this with fays fried meat and we had a wonderful dinner
