  1. Put the potatoes, garlic and shallots in a large sauce pan.
  2. Cover with cold water at least 2 inches over the potatoes.
  3. Cover and bring to a boil over medium heat.
  4. Once it reaches a boil, remove lid, reduce heat to low and cook for 10-15 minutes, until the potatoes and garlic are soft.
  5. Drain well and pour potatoes and garlic back into saucepan.
  6. Add butter.
  7. Mash potato mixture well.
  8. Add the rest of the ingredients except for the milk.
  9. Mix well with a wooden spoon.
  10. Return pan to low heat and add the milk/cream slowly, stirring constantly.
  11. Once potato mixture is creamy, remove from heat and serve.

This was my first attempt at garlic mashed potatoes, and I must say they turned out GREAT!! I love the added flavor the cheese gave them. The amount of garlic was just right! I probably could've added a little more milk, cause they were a little sticky, but it could also be due to using skim milk, since that was all I had on hand. Either way, they were great, and really easy, and I'm sure I'll make them again.

I'm always looking for good spud recipes, and this was one. I used a really good vintage cheddar cheese, and the flavour of that came through. The only change I made to the recipe was to add the minced roasted garlic in step 6 rather than step 1. I felt the water would dilute the flavour, and then I might strain minced garlic away.

This recipe is outstanding. I made it to go with crab-stuffed chicken and the combination was terrific. The only change I made was to use scallions instead of shallots. My family gave this dish raves!
