  • 5 large potatoes, peeled and cut into 1/2 inch cubes (about 2 1/2 pounds)
  • 15 garlic cloves, peeled and halved
  • 2 teaspoons salt, divided
  • 12 cup butter, softened
  • 12 cup whipping cream

directions

  • Place potatoes, garlic and 1 teaspoon salt in a large saucepan; add enough water to cover.
  • Bring to a boil; reduce heat.
  • Cover and simmer until potatoes are tender, about 10 minutes; drain.
  • Transfer potatoes and garlic to a mixing bowl; mash or put through ricer.
  • Add butter, cream and remaining salt; beat until smooth.
  • Do not overbeat potatoes lest they turn into a glutenous mass!

  2. This recipe could not have been more delicious. We had to stop ourselves. Thank you for this it was easier than roasting the garlic and tasted amazing.
     
  3. I used gold potatoes with the skins on and added minced garlic to them after they were drained. I also had to substitute Fat Free 1/2 & 1/2 for the cream. They still turned out fantastic! Enjoyed by all. Thanks!
     
  4. I was also worried that it had too much garlic but I doubled and followed the recipe and it came out so yummy! I used red potatoes and left the skin on. To add a kick to it, I reduced the milk by a fourth and replaced it with a large chunk of cream cheese. It also reheats really well with a little added milk!
     
  5. Perfect. It seems like too much garlic but it's not. This was a big hit with the roast beef it accompanied.

Tweaks

  1. Really good. I just couldn't use the cream with 1/2 cup of butter so used half and half instead. How could these not be good with all the butter and garlic. There was a nice hint of garlic, even with 15 cloves, not overwhelming though. Very good recipe. Served this with Honey-Bourbon Grilled Pork Tenderloin and peas. Thanks LHM
