This was delicious! I made it with chicken breasts and only marinated the meat for about four hours. I basted the chicken with the leftover marinade while I grilled. I would use a bit less thyme next time, but overall...a great and spicy recipe for chicken breasts. My family loved it, too.
I used 3 pounds chicken. Cut the oil to 1/3 cup, used the juice and zest from one whole lemon, used adobo salt, the basil and thyme was fresh. I added fresh minced garlic.I did marinate 24 hours. Grilled to brown on both sides then put on heavy foil to finish cooking. The chicken was very tender the skin crisp and flavorful.
This is a very flavourful marinade! I just found that the lemon was a little too tangy for our taste. The chicken cooked up tender & juicy on the bbq!
