Garlic Greek Style Spaghetti

- 1 lb spaghetti
- 4 tablespoons butter
- 2 -3 garlic cloves, minced (more if you like)
- 3 ounces goat cheese (Chevre, 1 small package)
- 4 ounces feta cheese, cubed
- 8 ounces diced tomatoes (or 1 can if fresh not available)
- 1⁄4 teaspoon red pepper flakes
- salt and pepper (the feta is pretty salty, taste before seasoning)

OPTIONAL INGREDIENTS
- 1 tablespoon chopped parsley
- 2 tablespoons capers, drained
- 1⁄4 cup chopped kalamata olive
directions
- Melt butter in large saute pan over medium low heat until melted.
- In meantime, boil spaghetti until just underdone (mine takes about 8 minutes), drain (reserve some of the water, about 1/2 cup) and set aside.
- Add garlic and saute until lightly brown, careful not to burn.
- Add cheeses and tomatoes and red pepper and stir to combine and slightly cook the tomatoes.
- Add cooked pasta and stir to combine.
- Add reserved pasta water if too thick.
- If desired, capers and or olives can be used as well for a little change (hey, it's your food, do what you like :).
- Garnish if if desired with chopped parsley,.

I was raised in SoCal and currently live in Las Vegas I am a licensed veterinary technician as well as a registered nurse. I grew up in my parents restaurant, so I learned to cook by watching and doing. No recipes, just what the basic ingredients were. I cooked for a while during my teen years and got to make my own creations which was fun, but left the business in '93..many fond memories still remain. I am mom to a wonderful 12 year old daughter who shares my love of cooking, although her tastes run to the exotic (at least for most 12 year olds I know). She loves Japanese, Chinese and and Thai food. Her favorites are Jellyfish and sushi.
