Garlic Greek Style Spaghetti

"Super quick, super flavorful pasta dish. Don't cringe until you taste it, it isn't overwhelmingly feta or goat cheese tasting. The garlic butter and tomatoes really mellow this out. I love it as a quick meal for me. Not for the calorie watchers -- butter makes a big difference in both taste and mouthfeel, Luscious."

  • Melt butter in large saute pan over medium low heat until melted.
  • In meantime, boil spaghetti until just underdone (mine takes about 8 minutes), drain (reserve some of the water, about 1/2 cup) and set aside.
  • Add garlic and saute until lightly brown, careful not to burn.
  • Add cheeses and tomatoes and red pepper and stir to combine and slightly cook the tomatoes.
  • Add cooked pasta and stir to combine.
  • Add reserved pasta water if too thick.
  • If desired, capers and or olives can be used as well for a little change (hey, it's your food, do what you like :).
  • Garnish if if desired with chopped parsley,.

I was raised in SoCal and currently live in Las Vegas I am a licensed veterinary technician as well as a registered nurse. I grew up in my parents restaurant, so I learned to cook by watching and doing. No recipes, just what the basic ingredients were. I cooked for a while during my teen years and got to make my own creations which was fun, but left the business in '93..many fond memories still remain. I am mom to a wonderful 12 year old daughter who shares my love of cooking, although her tastes run to the exotic (at least for most 12 year olds I know). She loves Japanese, Chinese and and Thai food. Her favorites are Jellyfish and sushi.
