I made this salad to serve with potato tacos. I reduced the recipe succussfully & omitted the cucumber. The flavors in the salad matched well with the mild tacos and the garlic is a top note. Not for date night! LOL

  1. Combine shredded cabbage, chopped cilantro, cucumber, and tomatoes in a large salad bowl.
  2. In a separate bowl whisk together vinegar, oil, salt, pepper and minced garlic.
  3. Pour vinegar mixture over vegetables and toss.
