  1. Bring water to a boil in a large saucepan or Dutch oven; stir in grits and salt.
  2. Return to a boil; cover, reduce heat, simmer 5 minutes, stirring occasionally. Remove from heat, add cheese and pepper, stirring until cheese melts. Serve hot.
