I lovemaking my own vinegar, the variations are endless. And it's simple, all you have to do is pour hot vinegar over the herbs, and let it stand for 2 weeks. Place a sprig of the fresh herb in the bttle, to make it look pretty, especially if giving as gifts. The recipe below is my favorite one.
- 1⁄2 cup fresh basil leaf
- 1 garlic clove, crushed
- 2 cups vinegar (5% acidity)
- fresh basil sprig
- garlic clove, whole
- Slightly bruise basil, and place in a wide mouth glass jar with garlic.
- Place vinegar in medium saucepan, bring to a boil. Pour vinegar over basil and garlic;cover with lid. Let stand at room temp 2 weeks.
- Strain vinegar into decorative jars or bottles, discarding basil and garlic residue;add additional sprigs of basil, and whole garlic cloves if desired. Seal with a cork or other airtight lid.
