Garlic and Thyme Glazed Carrots

An easy and yummy way to do carrots. From BBC Good Food.

  1. Put the garlic, butter, and thyme in a large wide pan and cook for a couple of minutes.
  2. Add the carrots and toss together, then pour in enough stock to barely cover the carrots.
  3. Cover and simmer for 10 to 15 minutes until just tender, then increase the heat and cook until all the stock has evaporated and the carrots are glazed.
  4. Season with salt and pepper and serve.

What a wonderful recipe! And so easy to make, too. Unluckily I could not find baby carrots, so I used grown ups and cut them into baby-like pieces. I can't wait to get some baby carrots soon to make this again, it was sooo good :) Thanks for posting this winner!
