A very elegant and easy Greek recipe for shrimp santorini. Recipe courtesy of Eat Greek Tonight website. Posted for Zaar World Tour II.

  1. Preheat the oven at 375°F.
  2. Heat half the oil in an ovenproof skillet.
  3. Add the butter and the red pepper.
  4. Saute the shrimp, in batches if necessary, 4-5 minutes, turning occasionally until the shrimp is pink.
  5. Stir in the wine and garlic and boil 3-4 minutes.
  6. When the liquid begins to thicken, stir in the chopped tomatoes and remove from the heat.
  7. Sprinkle with dill and cheese and cover with breadcrumbs.
  8. Drizzle remaining olive oil over top and broil 6 inches from heat source 3-4 minutes until bubbly.

This was a very simple easy recipe. I am not sure why you need to preheat the oven though, when I had everything ready I just broiled it (as directed). The taste of the wine comes through. My sauce did not thicken but it really didn't need to. I added some Italian parsley for looks and taste. Made for ZWT4.
