Garden Vegetable and Ham Salad

"During the summer our family eats a lot of salads. I love how refreshing they are and the fact that they are healthy doesn't hurt either. This salad is a meal in itself or could be used as a side dish."

directions

  • Cook pasta as directed on package.
  • Drain and rinse pasta in cold water and let chill.
  • Meanwhile, in large bowl, mix remaining salad ingredients and set aside.
  • In small bowl, mix dressing ingredients until well blended.
  • Add cooked and cooled pasta to salad.
  • Pour dressing over salad and toss to coat.
  • Serve immediately or cover and refrigerate.

We're big on salads like this during the warm summer months, & this recipe is now on my list of cool meals to make!   2. I like to keep pasta salad in the refrigerator during the summer when I'm at work so that my teens at home can help themselves. This was a hit with them and certainly a nice change from the usual Italian or Ranch flavored salads. We loved the mustard and dill - they are two of our favorite seasonings!! I used half Dijon and half brown mustard - as we were running low on Dijon - and it was still wonderful. I'll bet it would be good with honey mustard too. I did not add the additional salt and used a full pound of pasta (5 cups small shells) so added a bit more mayo and milk to moisten. Thanks gertc96! The entire family requested this one again.
     
  3. Made this with only a few changes. I used only 1/2 the dressing as we're not big on lots of it but I kept the mustard and dill the same. I also added about 1/2 cup of cubed marble cheese, a family favorite. We aren't fans of cold salads so I warmed the ham and didn't chill the pasta which left a nice room temp/slightly warmed pasta salad.
     
  4. This is awesome! You get a nice crunchy texture with veggies while having the soft smoothness of the pasta. Excellent blend of flavors. I highly recommend this dish. I cut the recipe in half and made it for our lunch yesterday. I have plenty of leftovers. Makes huge servings. You could easily make this for a side dish for a large crowd.   5. This is yummy! I used some mixes veggies (broccoli, yellow squash, snow peas and carrot) because I had them in the fridge. For the dressing I used a 50/50 mix of low fat mayo and fat free sour cream to trim the fat with Italian herb mix and used it lightly. Loved the addition of the mustard!. This is a great light lunch and will be a wonderful summer side for sandwich's and goodies off the grill. Thanks Gert. Made for Photo Tag
