  • Heat oil in large skillet.
  • Cook the first 4 ingredients, stirring until crisp tender.
  • Stir in remaining vegetables and spices.
  • Cook until hot.
  • Serve over spaghetti; sprinkle with cheese.

  1. Yum! My husband and I liked this a lot, and it was very easy to make. I like my spaghetti a little saucy, so I used two cans of Hunt's 'diced tomatoes in sauce' instead of the plain diced tomatoes. This is a great way to sneak in lots of healthy vegetables into a meal.
     
  2. A very beautiful and delicious recipe but a little bland. The taste of the garlic, olive oil and fresh vegetables is wonderful but I had to add a little salt to mine. Just my personal preference. I think alot of people would just appreciate this dish that way it is with all of the great fresh and natural flavors.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
