I was looking for ways to get some veggies into my toddler's all-carb diet. He loves this!

Ingredients Nutrition


  1. Preheat oven to 350 degrees.
  2. Grease a loaf pan.
  3. In a large bowl, combine all dry ingredients.
  4. In a separate bowl, combine buttermilk, 1 tablepoon oil, egg, applesauce.
  5. Add wet ingredients and vegetables to dry ingredients.
  6. Stir until blended.
  7. PLace batter in loaf pan.
  8. Brush with remaining olive oil and sprinkle with sunflower seeds.
  9. Bake for 50-60 minutes or until pick comes out clean.

you suggested this recipe to me when i said my toddler wasn't eating any veggies (on the baords)...I am going to try this this week--thank you so much and I will let you know how it comes out.
