Directions

  1. Prepare vegetables: Remove skin from tomatoes by dipping them in boiling water for about 10 seconds and sliding off skins. Remove seeds and chop finely. Remove seeds from pepper. Mince vegetables. If using a food processor, prepare tomatoes separately from other vegetables, using the pulse function. Mix all together. Let stand 1/2 hour before serving. Store in the refrigerator for up to a week.
