A quick, flavorful salad.
- 2 cups canned garbanzo beans, drained and rinsed
- 2⁄3 cup black olives, quartered
- 1⁄2 cup red bell pepper, diced
- 1⁄3 cup green onion, sliced
- 1⁄8 cup cilantro, chopped
- 2 tablespoons extra virgin olive oil
- 1 1⁄2 tablespoons balsamic vinegar
- 1 hard-boiled egg, diced
- salt and pepper
- In a medium bowl combine all ingredients except egg.
- Toss well.
- Gently stir in egg.
