Garbage Soup

This is a budget stretcher recipe where you use your potato peels. It can be the start of any type of soup you want to make, especially if you use method A. where you save it as a clear broth. Use in any recipe that calls for broth or consomme. If it cooks down add some more water (not too much) simmer on low heat covered

My Mother used to make Garbage Soup back in the 1950"s. But she peeled her potatoes and did not puree the veggies. They remained in the nicely cut up pieces. While the soup cooked, she diced bacon and fried it in a separate pan. When she served the soup, she placed a heaping tablespoon of the fried, diced bacon along with a bit of the bacon drippings on top of the bowl of Garbage Soup. MMMgood!

Ingredients Nutrition

  • 6 -7 large well scrubbed potato peels, cut peels about 1/4 inch thick
  • 1 large onion, chopped
  • 2 carrots, scrubbed or peeled, sliced
  • 1 stalk celery, sliced
  • 1 garlic clove, peeled
  • 1 teaspoon dried parsley
  • salt and pepper
  • 1 12 quarts water


  1. Mix all the ingredients in a large pot and simmer covered for 1 1/2 hours.
  2. You may now do one of two things: A- drain off the broth and reserve for future soup-making or use as any consomme, You may freeze it as well, adjust seasoning.
  3. B-Puree the veggies add back to the liquid and add any other ingredient you wish- leftover veggies, chicken, meat etc.
  4. This is truly a clean-the-fridge soup.
