This is similar to a blend used by Madhur Jaffrey. She states that a true garam masala mix does not contain spices such as coriander or turmeric. Her recipe uses the same amount of black cumin, whole cloves and black peppercorns as given above. She uses 1/3 of a nutmeg rather than 1/4, and also adds 1 tablespoon cardamom seed and a 2-3 inch stick of cinnamon, broken up. Her method is exactly the same as given above.

  1. Place all ingredients in a clean electric coffee grinder.
  2. Grind until fine.
  3. Store in a small jar with a tight-fitting lid.
  4. Keep away from heat and sunlight.
  5. This is a spice combo used in many Indian recipes.
