I had a recipe for aloo rasadar and I found it to be too soupy....So instead of using thickeners, I added some dried Chinese Mushrooms into it and voila! A new dish was born......

  1. Heat oil and add cumin seeds and asafetida powder. Let it sizzle for about 30 seconds. Add in the tomatoes, turmeric, chilli, salt, and coriander powder and fry for 30 seconds.
  2. Add your potatoes in and fry for 2 minutes. Add in water, bring to a boil, lower to a simmer and cook, covered, for about 10 minutes.
  3. Stir in mushrooms and garam masala. Stir well for 1 min and cover for around another 5 minutes.
  4. Serve.
