      Delicious! :) In view of the difficulty some reviewers experienced in these cakes retaining their shape, I made mine in non-stick, well-oiled egg rings which I find enable the contents to retain their shape perfectly and which can be safely removed when the contents - in this case the cakes - are ready to be turned. I made the full quantity and we enjoyed these with several meals over several days. They reheat well both in the oven and in the microwave. I made mine exactly to the recipe and really wouldn't want to change a thing. Each time we ate these, we enjoyed them with a generous dollop of creamy Greek yoghurt on top. YUM!       When making these, I reduced the amount of bacon to 4 slices, then crumbled & added it to only half of the potato mixture just before making the patties (wanted to see what it would taste like with AND without the bacon)! The meatless cakes taste great, but those with the bacon are really OUTSTANDING! Thanks for sharing your recipe! [Tagged, made & reviewed in 1-2-3 Hit Wonders cooking game]

      These potatoes were really delicious, but I had a little trouble with the 'cake' part! I tried using cooking spray as you suggested, then a small amount of margarine, but the only thing that cooked these cakes in a way that kept their shape was oil. I really loved the taste of the potato mixture and will probably bake it in the oven next time, as Kiwi suggested. Either way we enjoyed these and I will try them again!

      We liked this. I made this for a nice hot lunch witha guest on a cold day and it went down well. I didn't use the sour cream or salsa and instead of making patties, I put the mixture into an oven dish and baked it until it was golden brown in the oven. Please see my rating system: 4 lovely stars for a recipe that was easy to prepare and tasty. Thanks!

      Out of control! I tried this recipe after seeing it in Food & Drink and I've made it three time. It is a pleaser...no hesitation needed...easy too. Enjoy!
